WALTER SIDORAVICIUS
I am a chef with Venezuelan and European roots, and cooking has been my passion ever since I was a child. After I had spent over 15 years dedicated to the art of sushi, my culinary journey took me to live in Japan, and to work in Tokyo. I have shared my experience by teaching at the Basque Culinary Center as well as working as a gastronomy consultant in various cities including Vienna, Marrakesh, New York and London. In 2021, I fulfilled my dream of opening my own sushi bar in Ibiza, Omakase by Walt, where I offer my customers a unique culinary experience, inspired by authentic Japanese gastronomy.
How did you discover Ibiza?
Thanks to a good friend who was born in Ibiza, and with whom I worked in Madrid.
What does Ibiza mean to you?
For me, Ibiza is my home. It is where I practise my passion for cooking using outstanding local ingredients. Here I find the inspiration to create dishes, taking advantage of the huge choice of ingredients and the stimulating atmosphere.
What does the island transmit to you?
Peace.
What is your favourite dish from Ibiza?
“Arròs de Matances” [a traditional meat and rice dish].
Which song makes you think of Ibiza?
I don’t have a particular song. I do like the Pink Floyd soundtrack for the film “More”. The film shows us a true picture of Ibiza back then — which I appreciate, although I don’t necessarily agree with the excesses of that time.
Do you have a special memory of Ibiza?
The first time I saw the sunset from Sa Talaia.
What do you tell your friends about Ibiza?
When I recommend Ibiza to my friends, I emphasise three main aspects: the natural beauty of the island’s beaches and landscapes, the lively cultural and gastronomic scene, and the relaxed, friendly atmosphere that pervades the whole island. I would define Ibiza as a destination that combines fun and peace to perfection, offering a unique experience where you can enjoy yourself whether partying or relaxing, and all in an idyllic setting.
